Enjoy this creamy smoothie, which uses blueberries, a fruit packed with antioxidants and vitamins. You can make it with dairy or soy.
1 1/2 c. fresh blueberries*3/4 c. fat-free vanilla yogurt or plain soy-based yogurt3/4 c. fat-free milk or vanilla-flavored soy milkJuice of 1 medium orange2 tsp. ground flaxseed2 ice cubes*1 Tbsp. honey
Place blueberries in a blender with yogurt, milk, orange juice, flaxseed and ice; puree. Add honey and puree again. Pour into 2 tall glasses; serve immediately.
*Note: If desired, use frozen blueberries and skip the ice.
Makes 2 (1 1/4 cup) servings.
Dairy version: 217 calories, 1.5 g total fat, 7.5 g protein, 40 g carbohydrates, 3 mg cholesterol, 71.5 mg sodium and 3.5 g dietary fiber
Soy version: 221 calories, 4.25 g total fat, 6 g protein, 41 g carbohydrates, 49 mg sodium, 4.23 g dietary fiber
